if you need a quick, easy and healthy (plus yummy, because obv) dinner, i’ve got one for you today. we’ve been really working on our meal planning around here lately and this is by far one of the easiest additions to our menu.
grocery list:
- 4-6 chicken breasts or thighs
- 1 can black beans (we used some with jalepenos and it was yum!)
- 1 can corn
- 1 cup of salsa
- chili powder or taco seasoning
- 2 avocados
- 2 medium tomatoes
- cilantro
sprinkle chili powder or taco seasoning over your chicken, spray saute pan with cooking spray and add chicken over medium heat. cook chicken for 8-10 minutes (or until juices run clear) turning once. add salsa, corn and beans, and heat to boiling. turn down the heat, cover and simmer for about 10 minutes.

while your easiest-ever-seriously-it-couldn’t-be-any-easier chicken skillet simmers, cut up avocados and tomatoes into chunks and place into a bowl. we like to eat this “salad” with any meal and we usually toss with a vinaigrette or greek salad dressing, but for this dinner we didn’t (since it fits nicely with/on top of the main course). i could eat avocados and tomatoes with just salt and pepper all day long if it were kosher.

spoon your goods onto your plate, top with chopped cilantro and dig in. did you think there was more? no seriously, that’s it. easy right? super quick, really yummy and FAST. my kind of cookin’!

harroo friends! happy saturday and happy 3 day weekend (whoot)(whoot whoot). today we went and had lunch with my family to celebrate my auntie’s birthday and my mamas upcoming BIG birthday. it was really lovely! harper picked out her own outfit today (she literally scoffed at what i chose, and whilst what i picked was cute, i love her picks!). she insisted on wearing this clip from Emily once i told her it was a birthday lunch, because Em made this for her for her birthday party. i think it tops the outfit perfectly!
tonight we are getting some stuff to make a hummus plate, ice cream, and cuddling up with streaming netflix on the wii. hoping to kick the end of this plague that has been trying to murder our household this entire week. hope everyone has a wonderful rest of the weekend!

hello and happy friday friends! today’s mama style is featuring the adorable Jessica from TART. she’s a mama to Rowan (seriously one of THEE cutest little ladies i’ve ever laid eyes on) and livin’ the life over in hawaii with her hubby Derek. i’m super jealous of the fact that she sent me these pics in the middle of february and now i’m longing for bare legs and sandals! i love Jess’ blog – it’s full of photos of her and her cute little family and happiness. be sure to go and say hello!



how has your style changed since you became a mom?
Honestly, it hasn’t really changed at all. I’ve always dressed up, even when I know I’ll just be around the house all day because it makes me feel good and it’s fun!
if you’re having a particularly crazy day, what is the beauty/style step you absolutely will not skip?
Make-up! I wish I was one of those gals that looked naturally gorgeous every morning but that is not the case, so even when I don’t go all out, I at least do a base foundation/blush/eyeliner combo.
have you ever been mistaken for the nanny?
I actually have! But only because I look younger than I am.
piece of advice for new moms who don’t want to give up their style?
This is something I’ve been telling my friends for years: Don’t even own anything that you don’t absolutely love! If you only have pretty things in your closet, you have no choice but to wear a pretty outfit. If you’re one of those “but I need practical clothes while chasing around a kid all day” people, here are my tips for your cute outfit to be just that:
- I almost always wear shorts under my dresses/skirts so there’s no chance of undie peekaboos.
- I can’t preach enough about dry shampoo! We’ve all had those crazy days where you can barely get in a shower.. Tigi’s Rockaholic Dirty Secret is the best affordable one I’ve found so far.
- If you’re intimidated by wearing heels out with your little one, start with wedges, or buy a good pair of flat boots or colorful flats to snazz it up.
- Don’t be afraid of bold lipstick on the daily! If I ever feel like I need a little something to make an outfit pop, red lips are the best accessory. I love Maybelline’s 16-hour Superstay Lipcolors. They really do stay on all day and they dry nicely so you can still smother your kiddo in kisses without getting it all over them. They’re double sided so you also get a conditioning lip balm on one end if you just want some shine.
