Comfort Food – Rosemary Lemon Chicken Bake

comfort food week day two! oh, p.s.? it’s comfort food week. the dumping buckets rain and middle of October date just calls for it, amirite?

tonight we made this super easy, super yummy one dish dinner that i found on Sparkling Ink. i followed the recipe exactly, save for the amount of time in the oven (i like my chicken super crispy). it turned out really flavorful and my favorite – easy as heck.

shop:

>> chicken drumsticks (i used 8, could fit more if you needed!)
>> 5 large potatoes
>> 1 lemon
>>10 cloves of garlic
>> fresh rosemary (i used 4 sprigs, coarsely chopped)
>> 4 tbsp olive oil
>> glass of dry white wine
>> salt and pepper

cut up your potatoes and place them and chicken into a roasting dish, along with wedges of lemon. add cloves of garlic (i halved mine), chopped rosemary and sprinkle with salt and pepper. pour olive oil over everything and toss until coated. then add your white wine (obviously, pour yourself a glass at this point)(duh).

bake at 400 for an hour (if you like things a little crispier like i do. if not, bake 40-50 minutes as the recipe says).

i served some brussel sprouts along side this, and we all gobbled it up. the flavor was so yummy – i just love the combo of garlic, rosemary and lemon. bonus: the house smelled amazing whilst this was cookin’!

easy? super simple. took less than ten minutes to wash and cut potatoes, peel garlic and get all this goodness set up in the pan. served it right from the dish.
toddler friendly? i pulled the chicken off the bone and she ate it all. granted, she dipped it in peach yogurt but shooooot, i take what i can get. she loved the taters.
yummy and comforty? way yummy. potatoes = comforty.
inexpensive? yes! we grabbed the drumsticks on sale. this whole meal cost us under ten dollars. happy dance.

    i just made this tonight – it was DELISH! (my husband doesn’t eat dark meat, so i threw some breast halves in the mix. for the record, they work just as well!)

    if you are planning on posting more yummuy & easy recipes, i certainly won’t complain. :)

    p.s. while we’re on the topic of posts i won’t complain about…some more videos of harper being hysterical would fall into that category. that girl is a comedienne in the making.
