Vegan noms | Tempeh bean bowl

the first week i had instagram, i posted a photo of our new favorite dinner and have since gotten eleventeen questions about it. so i thought i’d share the goodness! we recently decided to cut out the majority of animal products from our diet (weekends are exceptions – for now). i love love love cheese and i love meat but during the week we have cut those things out and i have been feeling really good. sure, there are holidays and birthdays and special occasions (hello, pms) and i’ve given myself permission to not feel guilty then. but for the most part i end up feeling crummy after i eat dairy and meat, so making the switch hasn’t been that hard.

aaaaanyways, my friend Amy told me about this blog the vegan stoner and i love it. i really wanted to try tempeh because i don’t really love tofu, nor did i want to overload us with soy products (edited to add: turns out i can’t read and tempeh does in fact have soy beans in it. it also has rice, barley and millet. it’s perfect for this dish because of the rice-y texture. anyways, thanks Michelle for the heads up!). when i saw their super bean bowl i was sold. using the recipe + one change + one added nom, we now have our favorite dinner. it’s seriously SO easy and beyond yummy.

i buy our tempeh at trader joes. it’s the only one i’ve tried so i don’t know about any others, but it’s a brick-like package and i just crumble it up. we also love black beans, so we substitute that for refried.

p.s. Harper loves this dinner, too.

one package of tempeh
one can black beans, drained
one avocado
salsa
lime juice
tapatio
cilantro
corn salsa

i crumble the tempeh into a bowl and pour on some regular salsa, a few splashes of lime juice and a few of tapatio. stir it up real good and then heat that in a skillet on medium. meanwhile, heat up your beans, chop your avocado and prepare your mouthparts for massive amounts of yum.

after the beans and tempeh are heated, pile ‘em in a bowl and top with avocado, cilantro, hot sauce, etc. i have yet to find or try vegan sour cream, but the first time we made this i did put regular on top and it was glorious. also if you have a trader joes nearby, i consider this to be the best topping to this bowl:

corn & chile salsa = legit

i’m not kidding we eat this twice a week. so easy, so yummy. thanks so much vegan stoner for the awesome easy recipe (and overall awesome blog)!

Steppin’ Out Saturday | Good day, sunshine

SPRING! like, legitimately. well, maybe. who knows really, this is washington. but! at least it felt like spring yesterday! and we are supposed to have a 75 degree day today (my favorite number of degrees). sandals have been busted out and white jeans are making an appearance. white jeans scare me for multiple reasons but i decided to go for it.

yesterday was pretty awesome (besides the fact that Scot was doing some work so he missed the fun – sad face emoticon). my mom, Harper and i hit up the farmers market, a few nurseries and garage sales. i always love spending time with my mama, extra points for sunshine and errands that are fun.

Harper headed off to my moms for the night and Scot and i had ourselves a dinner date and then met up with bree and barham for some amazing cocktails at 1022. i’ve told you guys about this place before, yes? the drink menu changes as the seasons do and the things they put together are so unique and tasty. my favorite is the lavender, but i tried something The Lost Steps – cachaca, basil, cucumber and their house made ginger beer. highly suggest going if you find yourself in tacoma (seriously just check out that menu!).

today is my grandmas 85th birthday! we are all heading up to celebrate with her and plant some flowers in this ridiculously lovely weather. hope you are all having a great weekend. i’ll be back this week with a big fundraiser raffle to benefit March of Dimes – get your five dollars ready. :)

this week was a rollercoaster. we started off sick, thought we were all getting better, then realized no, we’re still sick. actually i’m still not sure if we’re sick or just worn down with allergies or something. whatever the duece is going on i’d really like it to stop because we’ve got stuffs to do and hopefully some spring weather to enjoy. germs are jerks. as is pollen.

the highlight of the week was the big girl bed transition which continues to be mostly a success. yesterday around 11 am she went upstairs “to hang out and read in my bed”. after a few minutes it was pretty quiet so i headed up to see what i’d find (thinking clothes tornado or coloring on the walls was on the menu) and there she was in her bed, eyes droopy. i asked her what she was doing and she said “i love my new bed. i kiss it a lot sometimes.” all drunk like and then passed out. i don’t even know. 11 in the morning?!

my love affair with instagram continues. bingo-ing all over the place this week with food, coffee, sleeping kid and…more food. follow the madness @teammandy.

High on Thrifting Thursday v.6

apparently it’s been 2 weeks. again. Harper and i had an amazing day last week where we had a pretty good thrifting adventure on our ladydate. remember the story about the toddler bed? well tuesday was the big day. the crib came down, the toddler bed went up (after a thorough disinfecting of all surfaces and tightening of all screws by the dude of the house). the excitement from the little one was out of this world. i was terrified, sad, a tiny bit excited – it was bittersweet. but mostly terrifying – she can just…get out.

anyways, i think this is one of the better thrifting finds (and stories) i’ve ever had!

i got the sheet from pottery barn, her comforter was a gift from Silky’s Cloud last year (we LOVE it, the filling is silk and hypoallergenic), the pilowcase and quilted pillow were thrifted and the blanket on the end is actually a tiny sleeping bag that i got at an antique store. the pattern is one of the cutest things i’ve ever seen.

so how did the first night go? it took her about an hour to actually go to sleep. i’m sure after we closed the door it hit her like a ton of bricks that she was freeeeee to get up and move about the cabin like a boss. we could hear her and she was most certainly out of the bed. i braced myself for a tornado of clothes, toys and a small child asleep in front of the door – but when it got quiet and i peeked in? all i could see was her tiny head, in bed, peeking out from the comforter. and then i cried. BUT WHATEVER I’M SURE THAT’S NORMAL.

the next morning at 8:15 she yelled “mommmmmy i’m awake!” and when i opened the door she was sitting there in her bed. naked, but in bed (homegirl cannot keep clothes on these days for the life of her). we had a massive high five and knucks party and went on with our day. naptime was as successful – just some roaming around, disrobing, and then passed out in the bed.

(don’t worry, i’m well aware that as time passes there will be a small child in our bed, staring at me while i’m sleeping, trying to get cookies from the pantry, etc etc etc. but JUST LET ME HAVE THIS RIGHT NOW OK ::crylaughs::)

my heart pretty much can’t take anymore excitement this week. this photo alone nearly killed me.
